I would leave it alone for a week or two while working on different parts of the design, or a different project, and come back to it with new eyes. The stitches may settle in a bit.
I know frogging is necessary at times, but I try hard to avoid it.

Are all your top threads laying in the same direction? At this part did you switch from stitching horizontal rows to stitching vertical rows? The tension of the thread pulls in different directions. When you switch in a solid color area like this, it's noticeable. Do you plan to wash this when done?...

Uh oh, sounds like you confirmed my fear, but at least I have an answer now. Thank you so much, I'll have to put it on hold and start something else at least until I can get the right fabric and start over. Your final won't look as refined as the photo because of the size difference.
Often the cover photo isn't a stitched image, it's the artwork the chart is based on.
It's been a while since I've looked at a Dimensions kit so I'm not sure if the cover image is stitched.

I make up my own thread cards, if it's a smallish color palette. I might make up 2 cards if it's limited colors, but a large quantity of each. I'd make a "working card" with 3-4 lengths per color, the rest on a storage card. Just a simple hole punched index card, some use cut up cereal box...

I tent stitch when I work over 1 on evenweave.
It looks the same on the front, but there is the long diagonal on the back.
I can slip my needle under those stitches and secure my thread.

Also, maybe loosen up a bit on your tension.
You should be able to get a needle through the back of stitches.

My favorites are my Fiskars embroidery scissors. Little 4" all stainless pair. Not orange handled like most Fiskars pairs. I picked them up with a 50% coupon from JoAnns for maybe $6-7.

I work full time, though no kids or pets at home to distract me.
I get most of my stitching time during my lunch hour.
It's also my de-stressor. But when I'm home, there are always other things that grab my attention.
