Coconut is one of my favorite flavors and served me well again. Up to 2/10 and hungry now. Need to go get some breakfast or I'll be eating every cookie and snack bar in the house!

Day 5!

2. sugar cookies
11. boterkoek

Sugar Cookies
a classic treat, fun for kids to decorate!
1 1/2 cups icing sugar
1 cup butter softened
1 egg
1 tsp vanilla extract
1/2 tsp almond extract
2 2/3 cups flour
1 tsp baking soda
1 tsp cream of tartar

cream butter and sugar, add egg and extracts. stir in flour, baking soda and cream of tartar. cover and refrigerate at least 3 hours. divide dough in half, roll each half to 1/4 " thick on lightly floured surface, cut into shapes with cookie cutters. place on lightly greased cookie cutters. bake at 325F for 9-11 minutes. cool and decorate as desired.

Boterkoek
Boterkoek is a dutch almond flavoured butter cake, serve along side coffee for insant smiles.

1 1/2 cup butter
2 cups sugar
2 eggs lightly beaten
4 tsp almond extract
4 cups flour
4 tsp baking powder
sliced almonds

set aside a little of the beaten eggs, mix remaining egg, butter, sugar and extract, stir in flour and baking powder. press into greased 9" x 13" pan. brush the egg you set aside over the cake, sprinkle with sliced almonds. bake at 325F for 30 minutes. cool in pan. cut into 18 bars

Day 6!

18. Cherry Blossoms
27. Shortbread Pinwheels

Cherry Blossoms
a maraschino cherry wrapped in almond cookie dough, yummmm.
1 cup butter softened
1/2 cup icing sugar
1 tsp vanilla
2 1/2 cups flour
1 cup ground almonds
60 maraschino cherries, patted dry

cream butter, blend in sugar and vanilla. add flour and almonds, mix well. wrap each cherry in a small amount of dough. place on an ungreased baking sheet, bake at 325F for 10-15 minutes. dust with confectioners sugar makes 60 cookies

shortbread pinwheels
spiraled chocolate and white cookie makes an interesting looking addition to a cookie tray

1 cup butter
2/3 cup icing sugar
1/2 tsp vanilla
2 cups flour
1/4 cup cocoa

cream butter and sugar together, mix in vanilla and flour. divide dough into two equal portions.add cocoa to one portion, mix well.between two pieces of waxed paper, roll out chocolate portion to 7 1/2' by 12". remove top paper. between two pieces of waxed paper roll out white portion to 7" by 12 ". remove top paper and invert over chocolate dough keeping ends together at one end. remove top paper. roll from end that is even, removing waxed paper as you go. when rolled the complete outside edge should be chocolate. wrap in plastic and refridgerate overnight.
remove from fridge and slice into 1/4" thick slices. place on ungreased baking sheet. Bake at 350F for 10-12 minutes.

Weeee I got both....well I wish I actually had both but the numbers will just have to do :lol: Now up to 6/10 :D

Love those spiral cookies....really great looking cookies and I bet they taste good too......think I will have to give them a go:)

Day 7! Happy New Year!

8. cherry christmas slices
20. peach shortbread muffins

Cherry Christmas Slices
easy, colorful and oh so delicious!

1 cup butter softened
1 cup icing sugar
1 egg
1 tsp vanilla
2 1/4 cup flour
2 cups red and green candied cherries, halved
1 cup pecan halves

cream butter and sugar, add egg and vanilla, beat until light and fluffy. add flour, mix well. stir in cherries and pecans. chill for one hour. shape dough into 3 10" rolls wrap in plastic wrap and place in a freezer bag. freeze over night. unwrap and cut into 1/8" slices. place on ungreased baking sheets. Bake at 325F for 10 to 12 min or until edges are golden brown. cool on wire racks.

peach shortbread muffins
fluffy and moist, these muffins have been a traditional christmas morning breakfast in my family for as long as I can remember

1 2/3 cup flour
1/2 cup sugar
2 1/2 tsp baking powder
1/4 tsp salt
1/2 tsp ginger
6 tbsp butter
1 cup milk
1 2/3 cup chopped peaches

2 tbsp sugar
1/2 tsp cinnamon

combine flour, sugar, baking powder, salt and ginger. cut in butter with a pastry cutter. add milk and peaches. spoon into greased muffin pan. sprinkle with sugar and cinnamon. bake at 400F for 20 to 25 min

Oooooh I got both again so now up to 8/10 :shock: :dance:

I think its temptation taunting me....I'm on a self imposed naughty but nice ban for a while and seeing these is making salivate :lol:

Missing our cookies! I read that Cairee's arm (wrist?) is painful so it's difficult to type. Maybe we could finish this game just with numbers? I'd miss the recipes, but ... I do love Bingo!

Day 8 (finally :oops: )

Shortbread cookies

doesnt everyone love a shortbread cookie?

2 cups butter (not margarine) softened
3/4 cups icing sugar
4 cups flour
red and green sugar

mix butter, sugar and flour well. with your hand squeeze and work until it holds together. roll onto lightly floured surface and cut into shapes, sprinkle with red and green sugar
bake at 325F for 15 to 20 minutes or until edges are lightly browned. remove from baking sheet and cool on counter top. makes about 6 dozen

Cranberry orange icebox cookies

lots of flavour, these are sure to be a favourite

1 cup butter
1 cup sugar
1 egg
2 tbsp milk
1 tsp vanilla
3 cups flour
1 1/2 tsp baking powder
2 tsp grated orange peel
2/3 cup chopped dried cranberries
1/4 cup chopped pecans
red and yellow food coloring

In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, milk and vanilla. Combine flour and baking powder; gradually add to creamed mixture and mix well.
Transfer 1 cup dough to a small bowl; stir in orange peel and yellow food coloring and set aside. Add the cranberries, pecans and red food coloring if desired to remaining dough; divide in half. Line an 8-in. x 4-in. loaf pan with waxed paper. Press one portion of cranberry dough evenly into pan; top with orange dough, then remaining cranberry dough. Cover and refrigerate for 2 hours or until firm. Remove dough from pan; cut in half lengthwise. Cut each portion into 1/4-in. slices. Place 1 in. apart on lightly greased baking sheets Bake at 375° for 8-10 minutes or until edges begin to brown. Remove to wire racks.

date coconut balls
quick, simple and yummy!

1 1/2 cup chopped dates
1 cup brown sugar, packed
1 tbsp butter
2 eggs
1 tsp vanilla
2 cups crisp rice cereal
1/2 cup chopped walnuts
1/4 cup chopped cherries
shredded coconut

combine dates, sugar, butter, eggs and vanilla in saucepan, heat. cook, stirring constantly for about 5 minutes. stir in cereal nuts and cherries, cool unitl mixture is warm. shape into 1 inch balls, roll balls in coconut. butter your hands to prevent dough from sticking. makes 48 balls.
