Mine is a Lemon Cake. I made so many of them as the family thinks that it is the best cake ever!
LEMON DRIZZLE CAKE
You will need a loaf tin, size approx.3.5†x 4.5†x 3†deep.
INGREDIENTS :
4oz of margarine or butter
8oz self raising flour
6oz of caster sugar
2 eggs
1/4 teaspoon of salt
The grated rind of one lemon
8 tablespoons of sweetened milk (just add 1 dessertspoonful of sugar to the milk)
For the topping, put the juice of the lemon in a jug and add granulated (or caster) sugar until it becomes a paste to pour on the cake
METHOD :
Preheat the oven, gas Mark 4
Cream the butter or margarine and sugar together
Beat in the eggs one at a time
Mix in flour and remaining ingredients (salt, grated rind and sweetened milk)
Bake in moderate oven, on the middle shelf (4th from the top) for 1 hour approx. gas mark 4.
Remove the cake from the tin, then pour the topping over it.
Cool on a wire rack.
PS : I often double the quantity to make 2 cakes at once.
