In Dutch the kind bishop's name got turned into "Sinterklaas" (Sint Nicolaas only if you wanted to be very formal, or in certain songs - which, incidentally, I have been singing off and on throughout the day).

Yesterday I made gevulde ("filled") speculaas, a treat traditionally eaten around this time of year. The filling is a home-made almond paste, a bit like a moister and slightly coarser marzipan, and the outside has spices in it like cinnamon and clove and nutmeg and a LOT of soft dark brown sugar. The texture is somewhere between a cookie and a cake.

If that is the traditional food for St Nikolaus day, I would definitely celebrate it. Your dish sounds yummy and looks even yummier. I think it should be added to the S&G menu for at least the whole month of December.
