And despite their sign, they do have lots and lots of confetti, it's why they are able to look so amazingly detailed.
As for the fabric count, use whatever you feel comfortable with, I've used 18, 22, and 25 ct on some of my various projects. The only thing to remember is the difference in the size of your finished piece.
I'm working on a SK (Story keep, aka bookmark) on 18 count aida. It still looks as detailed as ever, but it's quite larger. It would be impossible to be a book mark, it's about a foot and a half in height, or will be when it's done.
