Newbie need help -Threading the needle

Hello all.
I am new to cross stitching. I have read a lot of stuff on here about the loop method for starting with a new piece of thread. I understand how to make the loop and fasten it. My question is how do you secure the "open ends" of the tread to the needle? Do you knot the thread to the needle? or do you just leave it open? If you leave it open don't you have to worry about the loose ends going back through the eye thus un-threading the needle?
Even if the loop method is not used and you secure the thread with stitches- I cannot seem to find anything that describes what to do with securing the tread to the needle?
