Oh man that looks good.. and mauveme? sweet potato loaf? Recipe please? I have 3 humongous swetpotatoes sitting out in the garage where it's nice and cold because they're too freaking huge to bring into the tiny kitchen. Too big to bake and eat like a regular baked potato which is my usual method of consumption, so I was going to look for a recipe or 5 to use them up this weekend.

Just what I was going to say. I've always got some sweet potatoes in and that sounds as good as my courgette loaf.NeedleAndFork wrote:Oh man that looks good.. and mauveme? sweet potato loaf? Recipe please?

1 c sugar (original recipe calls for 1 1/2 and I always reduce sugar and it was sweet still -next time I will use only 3/4 c)
1/2 c veg oil (I use canola)
2 eggs
1 3/4 c flour
1 t. baking soda
1/4 t salt
1/2 t cinnamon
1/2 t nutmeg
1/3 c water
1 c cooked mashed sweet potato
1/2 c golden raisins
1/2 c chopped pecans
Combine sugar and oil and beat till mixed, add eggs and beat well.
Alternate sifted dry ingredients with water into egg and oil mixture
Stir is yams and nuts and raisins
Grease and flour 9x5 loaf pan
Cook at 350 for 1 hr (I had to cook an additional 20 min or so--my oven is old and the door doesn't close snugly)
Let me know how you like it, I love mine. I don't care for nutmeg and almost left it out,,,,glad I didn't
PS, another great way to cook sweet potatoes is to mash them, add some chopped scallions and frozen corn, mix and nuke till warm (frozen corn cools it down too much) Oh and a little butter too. It keeps well until the next day too if there is too much, I use it to replace spuds.

Thank you for the recipe Linda, I think I might have to try that one. We always have sweet potatoes in the house.

Re: Mmmm ... smell that banana bread ...
Thanks for the recipe
I'm out of raisins at the moment (used them up in some SA yellow rice). I'm definitely going to have a go once I restock though.

Don't know about you all, but as "sooon" as that pic. showed up, I "actually "smelled" banana bread. Can't "stand" bananas, but that pic. "tormented" me for a "few secs."
So here's a or to go along with your banana bread. Enjoy.
