If you have a scanner at home, just scan and print each page of the pattern as a working copy; otherwise, a copy machine will do the same. The center axes should be noted on the chart somewhere.

If you want to start in the middle then you would find the page that has the center on it and then follow the chart as usual. You can follow the thread from one page to the next if that is most comfortable for you or you can work in blokes of 10X10 squares or what ever size you want and just follow each page until complete.
If you want to start with page 1 then you have to do some counting. Find the center of the pattern and then count out from there to the top and left so that you know where on the edge of the fabric that you need to start. You can then start witrh page 1 and work across each page one at a time. If you do start with the first page then count, count and count again so that you are sure that where you are starting is the right spot in the fabric.
I like to work from the center out. Whatever you decide,,,,,Good Luck.

I always start at page one and just make sure the fabric I am using is big enough plus a bit extra all round.

Well, in my case, I usually do from center if I buy any kit, except the big one (I prefer to start from the top left corner especially if it's a complex one because starting from the middle will be somewhat confusing)
But, if we are talking about chart, I usually buy a little bit bigger fabric, and then count around 10 cm or about 4 inches for the border. Then I will start from the top left area (from page one).
My conclusion: starting from the middle will help you to get the work located in the center area. But, if it's a complex one or if you could define how much fabric you could use, then it's much more recommended to start from the upper left. Based on your story, the book seems to suggest readers to make it from the upper left.
