As I have said before, I haven't stitched for 9 years. I have stored my fabric flat and folded during this time, that is how it came so it felt like the natural thing to do. Some pieces are easy to iron, but some have permanent creases. Even when two pieces are of the same type (aida, Jobelan etc) they will be different in this aspect.
What can I do other than throw them all out?
Do most of you store the fabric rolled up?
What fabrics do you find to crease more/less than others?

Worth a trying to get creases out
Spray damp the fabric and on Raised side of the crease put a piece of clean string and iron As that forces the crease down and hope full out HTH
Why not use the fabric and wash and iron later
When i get a new kit 1st thing i do is to take out the fabric iron it then roll it Numbering the pattern and also the fabric so i can remember which goes with which

Like you I tend to store it how it came, so some of my pieces are rolled others folded. I have never really thought about it, but thinking about it when storing make sure they isn't anything on top of them to cause them to crease.
Before you think about throwing it away.... shudder l would try washing and ironing it, or are the bits of it without creases, that you could use for small things, bookmarks, coasters, cards that sort of thing.

Try giving it a wash, to relax the fibres, then ironing it.
