Anchor and DMC are a little different in that regard, it's true. Try adjusting your tension (don't pull it through quite so hard?) and railroad the threads so they sit side by side. Might help. Three strands would look really chunky next to the 2 strands of Anchor, though, IMHO.

Railroading is when you make sure the needle slides between the pair of threads as you put the needle into the fabric. As you pull the stitch through the cloth, the threads should lie side by side. Or you could use a laying tool, as advocated around the forum at the moment.

I know how you feel and I get the same, I don't like show through either however I think Serinde is right you can see the three strands is different and bulkier than the two strands, can I say something which may help? There are not many if anybody that is going to be looking at your finished piece right on top of it, if you actually stand back from your stitching a bit can you still see the show through? I think when it is done and on the wall you will be more than happy with it, I stitch on 18 count with two strands for my Haed charts and they look great finished, yet up close you can see the show through. I usually use DMC and haven't had a problem with coverage on two strands. I'm using 2 strand DMC on my SQ on 18 ct and don't get show through that's noticeable when you look at it from a normal framing distance. As Serinde said, it could be a tension issue. I think switching to 3 threads part way through is likely to look noticeably bulky in the finished piece. Before you decide, would suggest you do as Crafterglen has suggested and stand a normal distance away from your piece as you would when framed and then see whether you can notice first show through and second any bulkiness.
