Can't help with the book, but evenweave shouldn't be a problem; Sew & So is my favourite shop and they have all sorts of evenweave, cotton, linen, mixed fabric and in plenty of colours. They've got linen in a variety of "natural" shades like Raw and Flax.
There is also Rustico aida, which is aida that looks a bit like natural linen. Not sure if there is a linen actually called "Rustic" -- is it a particular shade that you know of? Do you know which brand it is? (Zweigart, DMC, Permin...)
