Pot Holders - cross stitching on pre made ones - Rose?

I have some premade pot holders by charles craft. They are the same ones that are in the gallery Rose has done.

I did one once and struggled so much I ended picking the binding off and sewing on the aida and then sewing it back on with different binding...it is on the first page of my gallery. It kind of turned me off doing them.

However, I want to do one or two and would like to know what the secret is to cross stitching on them without pulling them apart!
